The other day, my mom and I were invited over to a friends house for dinner. She said that she was making a vegetarian meal and when I tasted it, I couldn’t believe it was vegetarian. It was super flavor full, super easy, super delicious, and super “oh em gee I’m gonna copy this”. She had gone to the beloved Trader Joe’s store and bought a “soy chorizo” which is what made this dish vegetarian but taste like a chorizo lovers paradise. She quickly sautéed onion, garlic, and the chorizo, then added swiss chard and tomatoes. Doesn’t that sound easy? Believe me, it is. For a finale presentation, a fried egg on top with the yolk running into the dish.
I went to Trader Joe’s that next week and bought all the ingredients —— this meal cost me about $5 and it made enough to feed about 4 people! If you don’t have a Trader Joe’s near you, then I feel very bad for you. I guess you’ll just have to take my word for it that this meal is BOMB!
Soy chorizo and swiss chard
1 soy chorizo link (about 1 1/2 cups cooked chorizo)
2 bags swiss chard (about 5-6 cups I would say)
1/2 onion- diced
2 garlic cloves – minced
1 cup halved cherry tomatoes
1 cup of water
Start by sautéing the onion and then add the garlic and chorizo once the onions become translucent. Then, add the swiss chard, tomatoes, and 1/2 the water. Stir, and then cover and let cook for about 20 minutes or until the swiss chard is tender. Add more water as needed to make a sauce and as it evaporates and cooks the swiss chard. Then VOILA! It’s done — easy peasy! Add a fried egg if you want
