Simple Cumin Kale with Baked Salmon

The other day at the grocery store, I bought a huge bag of kale for $1.99! I was so excited to cook it but I didn’t want to make something extremely intricate. I bought a huge piece of salmon as well so I decided to pair them together to make a simple yet delicious meal.Β Just bake the salmon with some garlic, salt, pepper, and olive oil and it’s super tasty!

The good thing about kale is that it is SOOOOOO EXTREMELY GOOD FOR YOU!!! Lots of vitamins and lots of flavors. I like it more than spinach because it has a saltier flavor and also more of a bite. You can pretty much add any flavor to it and it would be good– my choice though would be cumin!

If you’re looking for something quick and satisfying then definitely make this meal



2 garlic cloves
1/2 small onion
4 – 5 cups kale
1/2 tsp cumin
1/2 tsp coriander
1-2 cups water
salt and pepper to taste

SautΓ© the onion in some olive oil until translucent then add the garlic and continue to cook for about 2 minutes. Add the cumin, coriander, salt and pepper, and about 1/2 a cup of water. Then add the kale, stirring around. Cover the kale and keep adding water as needed to steam the vegetable. If you like it a little crunchier, then cook for about 10 minutes. If you want it a little softer, then cook the kale for about 20 minutes. Top with a nice piece of salmon and enjoy! You can even squeeze some lemon over it for a little kick!
