I can’t believe that this is my 60th post! It’s amazing to me to think that I’ve actually had the patience and persistence to not only make 60 unique dishes, but share them as well. For my 60th post, of course it has to be something sweet to celebrate!
The other day I went to hang out with some friends from work – one who is a vegetarian and one who is a vegan. My vegan friend made these DELICIOUS peanut butter chocolate chip cookies. I couldn’t stop eating them and before I knew it, there were only a couple left. Oops. I asked for the recipe and ended up making them the next day they were that good. Since they are vegan, you can also munch on the batter (which is super addicting).
What I love about these cookies is that they come out crispy around the edges and soft in the middle. They are not overly sweet which I love as well — makes me think that I’m eating a slightly healthier cookie.
Vegan Peanut Butter Chocolate Chip Cookies
1/3 cup peanut butter (or another nut butter)
1/3 cup almond milk
2 tbspn oil
1 teaspoon vanilla
3/4 cup sugar
3/4 cup whole wheat flour
1 cup instant quick cooking oats
1/2 teaspoon baking soda
1/2 – 1 cup chocolate chips (vegan or not)
Mix the first 5 ingredients until smooth, and then add the dry ingredients. Mix well. Pre-heat oven to 400 and drop tablespoon sized balls of dough onto parchment paper. Bake in the oven for about 8 minutes. Watch them carefully because they will burn!!!!!

You can’t tell they are vegan either. Make them for your friends and see if they notice!
