Chili Beans

I’m a big fan of having things in the fridge that can 1) be made ahead of time and 2) is versatile. This dish fits both criteria. I put these in burritos, eat over rice, or just add a little cheese and heat it up! You really can’t go wrong with this recipe. If you are having a taco night then this would be perfect for the vegetarians in the crowd!

Chili Beans

1 can black beans – drained
1 can diced tomatoes
1/2 red pepper – chopped
1/2 green pepper – chopped
1/2 white onion – chopped
2 cloves garlic – minced
2 tablespoons chili powder
pinch of paprika
salt and pepper

Start by sauteing the onions and peppers in olive oil for about 5 minutes, or until soft. Add the garlic and the spices and stir until all coated with the spices. Saute for another 2 minutes. Add the beans and the tomatoes and mix well. Let the mixture simmer for about 7 or so minutes and then it is ready to serve! So easy!
