Sweet Potato Chickpea Stew

Good habit!

I made this recipe before about 3 years ago and I remember it was really tasty! I had some sweet potatoes that I bought at the store and somehow remembered that I had this recipe saved somewhere and decided to whip it up! It’s super easy and SOOO good. Super hearty and filling, plus really good for you and great for cold days!

Sweet Potato Stew

Ingredients:

2 small sweet potatoes – peeled and cut into small cubes
1 red bell pepper – chopped
1/2 onion- chopped
2 garlic cloves – minced
1 can chickpeas- rinsed and drained
1 can diced tomatoes
1 teaspoon paprika
1/2 teaspoon turmeric
1/2 teaspoon dried basil
pinch of cinnamon
pinch of cayenne
1 bay leaf
3 cupsΒ veggie stock
salt and pepper to taste

Saute the sweet potato, pepper, and onion in a little bit of oil until the potatoes are just becoming tender. Then add the garlic and spices and saute for about 3 minutes. Then add the can of chickpeas and tomatoes and 1/2 of the chicken stock. Simmer covered for about 10 minutes. The liquid should get all soaked up, when this happens, add the remaining half of stock and simmer for about 5-10 more minutes, until the desired liquid consistency is obtained. Serve hot!

I usually add a little more cinnamon because I like the flavor. Try it out!
