Refried Bean Tostadas

Believe it or not, I haven’t actually cooked anything in about 4 days. I guess that’s what you get when you cook for a straight week and then just munch on leftovers. I feel as though I owe a recipe — at least something quick to throw together because knowing me, I’ll probably make this soon anyways.

Quick Tostadas

2 corn tortillas
canola oil for frying
1/2 tomato- chopped
1 cup lettuce – chopped
1/4 cup refried beans

Put enough canola oil in a pan to shallow fry the tortillas. I tried them until they were crispy and could stand by themselves. Have them cool on a paper towel. Top with refried beans, lettuce, and tomato. You can also add sour cream of even layer on chicken or beef!
