Mini Pineapple and Prosciutto Pizzas

OH MY GOODNESS! I have never been to a wedding before and I’m so glad that my first experience went the way that it did! Beautiful bride, beautiful venue/view, and way too good of a time!

The drive there and back wore me out though. We didn’t end up getting home until late afternoon and since we were starving, I whipped up a little snack that took no more than 5 minutes!

Mini pineapple and prosciutto pizzas

1/4 cup chopped pineapple (more or less)
2 slices prosciutto
1 sandwich thin or pita pocket
grated mozzarella or sharp white cheddar

1. Set your oven to broil. It won’t take long for it to heat up and you don’t want to burn your pizzas either!

2. Start by putting a little bit of cheese on bothΒ pieces of the bread.Β Then start layering pieces of prosciutto and pineapple, putting cheese in between them in order for all of the ingredients to stick. Finish it off with cheese on top. Place under the broiler for about 3 minutes or until all the cheese has melted. Definitely a quick and filling treat!

  1. Oh! Good catch! I meant to say both pieces of bread. I used one of those sandwich thins so there were 2 pieces. Basically, I meant to put it on both pieces of bread on the bottom of the piece! Thanks for the comment and sorry for the confusion!
