I’ve always been a fan of sweet potatoes. I’m an even bigger fan of sweet potatoes when mixed with thyme and garlic! It’s a simple combination that adds a TON of unexpected flavor, at least for me.
I never used to experiment with thyme. I never would have even thought to open the spice let along use it on sweet potatoes! That was until I started working at a cooking school in Denver. It really opened my eyes to spices and how to use them to create full of flavor dishes.
Let’s talk about sweet potatoes for a hot second. Sweet potatoes are a great carbohydrate. Not only are they lower in calories than other carbs such as brown rice or white potato, they also taste sweet so you can use them in dessert! Woohoo — double dippin’! Half a cup of sweet potatoes has 57 calories and 13.5 grams of carbs — a great natural energy source for long days and hard workouts!
Sweet Potatoes with Thyme and Garlic
2 large sweet potatoes cut into cubes
1 small onion, chopped
3 cloves of garlic, chopped
1 tablespoon (or more) of FRESH chopped thyme — you can use dried thyme as well, but the flavor will be a little bit different
Salt and Pepper to taste
…and olive oil
Mix everything in a large bowl and then bake at 350 degrees until the potatoes are nice and tender! So delicious, I promise you won’t be disappointed
